In keeping with the spirit of my “Combating the High Price of Food” series this week, here’s a dinner we had last night that is almost as easy as drive-thru.
- Marinate boneless, skinless chicken breasts in teriyaki marinade. (I use the bottled kind and can usually get two meals from each bottle.)
- Throw the chicken on the grill along with your choice of fresh or canned pineapple rings.
- When the chicken and pineapple are grilled to your liking, stack a pineapple ring on top of each chicken breast and melt a piece of swiss cheese on top.
- Suggested sides: rice and steamed broccoli.
Tonight we’re having another “almost as easy as drive-thru” dinner, baked ravioli.
