How to Make Deviled Eggs
Okay, just one more deviled egg post - I promise. But Sitemeter tells me that a lot of people find this blog searching for deviled egg info and that is never more true than this weekend.
1. Hard-boil the eggs. Here's my method: I place the eggs in a pan and cover with cold water. After bringing to a boil, I shut the heat off and let the eggs sit for 10 minutes or so. Make sure to test a single egg to make sure it's done before peeling them all.
2. Peel the eggs. Rinse each egg to get off any last bits of shell, and place it on a plate covered with paper towels to dry.
3. Cut the eggs in half and remove the yolk. Usually, after cutting them in half, I can just bend the eggs a little bit and pop the yolk right into a mixing bowl. If you wipe the knife after each cut it will keep the yolk from getting on the outside of subsequent eggs.
4. Mix the yolk with other ingredients using your favorite deviled egg recipe. My favorite recipe can be found here.
5. Fill the egg whites with the mixture. I use one of theseto make them pretty.
That's it! I promise they'll be crowd pleasers every time.

I was disappointed that eggs didn't go on sale this easter. I always devil a bunch and just didn't this time.
I like to mix it up some, I add chopped ham to some, olives to others, dill pickles in some or sweet pickles.

I also looked for sale eggs at Easter and there were none here either. At least they're somewhat inexpensive to begin with.
